I am a born and bred South African “boere meisie with an English twist” from a small town called Leisure Bay, located on the Lower South Coast of KZN. I was fortunate enough to spend quality time in the kitchen with my mom assisting in the baking of peanut butter cookies and her delicious rusks.
With great support and guidance from my parents I found myself in the pursuit of a career as a chef. After qualifying from Christina Martin’s School of Food and Wine in 2001, I packed up my knives and headed for the UK where I spent 2 years working hard upon grooming myself from Commis Chef to Senior Chef de Partie . My passion for cooking evolved from my experience in the kitchens of Just St. James (London), St. Michael’s Manor Boutique Hotel (Hertfordshire) and The Anchor Inn (East Anglia).
After filling my head with inspiration, I returned to South Africa in 2004 and challenged myself on working in the bush. I joined Singita Private Game Reserve as Sous Chef where I was able to kick start my creativity juices by combining Western and African flavours. In 2006 I did a stint at Aurelia’s Restaurant (Emperor’s Palace) before moving on to The Castle Kyalami. In November 2008, I joined the Carlson Rezidor group as Senior Sous and helped with the opening of the Radisson Blu Hotel, Sandton. I have been able to show my worth and through hard work was promoted to Executive Chef of the hotel and Vivace Restaurant and Bar, August 2010.
In my 16 years of being in this profession I have had the most thrilling experience and wouldn’t change it for the world. I have had the honor of cooking for celebrities like Andrea Bocelli, Bryan Adams, Shakira, President Barak Obama and Family and White House Staff, Oprah Winfrey, Hillary Clinton and many soccer stars over the FIFA Soccer World Cup 2010. I have met the most amazing characters and personalities over the years with my travels, some I still call friends and a lot whom have enriched my life and helped in my development which I will always be thankful for.
I believe that one is never too old to learn and the culinary industry has really brought that continuous exciting learning curve to my life.
